During Ramadan the house changes its clock. No lunch service; the kitchen starts in the afternoon, and at iftar everyone goes up to the roof.
On every table, dates and a bowl of lben. The chorba frik waits in its tureen, the bourek comes out of the fryer. When the call rises from the city, the fast is broken facing the bay, then the prayer, then back for the dishes.
The evening is long. The Belvedere serves tea and kalb el louz until s’hour, from 11:30 pm to 2:30 am; the Pastry Shop stays open until 2 am. Families from the city come up for an evening, travellers for a night.
