The menu
Sixteen wood-fired pizzas, a calzone, sandwiches and four extras. Every pizza comes as a 33 cm regular and a 40 cm giant.
Two sizes, one dough
Every pizza comes as a regular, thirty-three centimetres, and as a giant, forty. The dough is the same: it rises for twenty-four hours before it sees the oven.
Extras are what goes on top of a pizza — cheese, mushrooms, olives, egg. Taking an ingredient off costs nothing.
Red and white
The red ones start from peeled tomatoes crushed by hand that morning; the white ones from a cream base. La Dar Zitoun, the one named after the house, is a white: cream, merguez, egg, Kabylie olives.
